Ostsin juurde martsipani ja tegin m\u00f5nusalt v\u00f5ise ja munaga rikastatud p\u00e4rmitaigna. Kes martsipani f\u00e4nn pole, v\u00f5ib asendada ta valge \u0161okolaadiga, mis sobib ka v\u00e4ga h\u00e4sti mooniseemnetega. Mina tegin nad \u00fches vormis, k\u00fclg-k\u00fclje k\u00f5rval, kuid v\u00f5ib teha ka individuaalsed saiakesed. Mina teen nad \u00fches vormis seet\u00f5ttu, et l\u00f5pptulemus on alati kohevam, \u00f5hulisem ja pehmem. Selle retsepti j\u00e4rgi tulebki \u00fcle\u00fcldse pehmemat sorti p\u00e4rmitainas.<br \/>\n*Soolast v\u00f5id kasutan k\u00f5ikides k\u00fcpsetistes, (magedat v\u00f5id mul k\u00fclmikus polegi), soolasus aitab magusal maitsel v\u00e4lja tulla ja annab oluliselt saiakeste maitsele juurde. Siis kaalun juurde jahu, u 225 g ja klopin oma puulusikaga segu siledaks. See on siis <b>eelkergitus<\/b>. Mina panen oma eelkergituse ahju kerkima, sest mul on taigna kergitamise re\u017eiim, mis 35 kraadi juures hoiab temperatuuri ja lisab ka veeauru. Kuid mul Ema teeb t\u00e4itsa tavalises ahjus ka seda sama kraadi juures. Ahjus pole tuulet\u00f5mmet, mida p\u00e4rmitainas ei salli.<\/p>\n<p>Niikaua kui tainas kerkib valmistan ette j\u00e4rgmised asjad. Sulatan kastrulis 75 g v\u00f5id, mis ideaalis v\u00f5iks olla jahtunud selleks ajaks kui teda vaja on. Kui tainas on liiga kleepuv, v\u00f5ib natuke jahu juurde lisada, kuid \u00fcldiselt mida v\u00e4hem jahu seda pehmem tainas ja seda pehmemad k\u00fcpsetised. Viimasena lisan ma juurde sulav\u00f5i, mille s\u00f5tkun enam-v\u00e4hem tainasse. V\u00f5i viimasena lisamine aitab taina ilusaks siledaks teha ja enda k\u00e4ed tainast puhtaks. Siis l\u00e4heb tainas <b>teise kergitusse<\/b>, et ta kerkiks kahekordseks.<\/p>\n<p>Kui tainas on kahekordne tuleb t\u00f6\u00f6pind puhtaks teha ja seda tainapallikest pisut veel s\u00f5tkuda. Siis rullida enam-v\u00e4hem nelinurkseks. Seega pudistasin lihtsalt toasooja martsipani k\u00e4tevahel t\u00fckikesteks. Panen ka ahju siis kuumenema kui rullid vormis on, siis nad j\u00f5uavad selle aja kerkida m\u00f5nusalt. Ahi l\u00e4heb mul <b>200 kraadi<\/b> juurde ja saiakesed on seal ahjus umbes <b>15-20 minutit<\/b>, olenevalt ahjust. Vahetult enne ahju panekut klopin ma lahti muna ja m\u00e4\u00e4rin oma rullid \u00fcle.
